8 THINGS YOU DIDN'T KNOW ABOUT COLD BREW COFFEE

1. "TODDY COFFEE" COFFEE IS ALSO KNOWN AS COLD BREW
Todd Simpson, a chemical engineering graduate of Cornell, discovered that high temperatures facilitate the release of undesirable flavor elements. A roasted coffee bean contains many compounds that are extracted during the brewing process, some of which are only soluble at high temperatures. By using cold water to brew, the beans are never exposed to high temperatures and out of this idea, the Toddy cold brew system was born, or “toddy coffee".

2. ITS ORIGINS ARE UNKNOWN
Todd Simpson was probably not the first to figure out that coffee could be brewed cold. While we have an idea of where coffee originated it is still unknown where cold brewing was actually originally practised, if anywhere.

3. 67% LESS CAFFEINE THAN TRADITIONAL COFFEE
According to the National Heartburn Alliance, of 54 Americans who suffer heartburn, 75% say coffee can cause it. The cold brew process results in a coffee that is 67% less acidic than coffee brewed hot. This makes it a popular choice for people who suffer from acid sensitivity.

4. NEEDS 12-48 HOURS TO BREW

5. TIME vs. HEAT
While heat allows coffee to be brewed in a matter of minutes, or even seconds, the cold brew process uses strictly time. Since it's not quick, it's best to brew a full day or so in advance. The water doesn't need to be cold... room temperature should do just fine.

6. NATURALLY SWEET TASTE
Because cold brew coffee is 67% less acidic than hot brew coffee it has a much sweeter taste. It isn't bitter like hot brew coffee. It typically has a full body flavor and the flavors of chocolate, vanilla and even citrus or other fruits can really be drawn out.

7. IN ADDITION TO DRINKING IT HAS MANY OTHER USES
Cold brew coffee has many uses beyond drink- ing. The cold brew exract can be stored for up to two weeks and is great to use in ice cream, coffee ice cubes, baked goods such as coffee brownies, in your smoothies, or even to mix with yogurt for a light, tasty snack.

8.  COLD BREW COFFEE IS QUICKLY  GAINING POPULARITY
Because of all of its amazing benefits, cold brew coffee is becoming more and more prominent in coffee shops. Ask your local barista if they serve cold brew coffee and you just might be in for a special treat!
